Recipe for Amsterdam-Style Ceviche: Herring Ceviche Sandwich

Amsterdam ceviche

When you think of Amsterdam-style ceviche, you soon naturally think of herring. In the Netherlands, we already know rollmops, but fortunately this herring ceviche is a little more refined in its acidity. Still, we think it’s truly ceviche Amsterdam-style, especially since it contains all the components of a herring sandwich.

Preparing the herring ceviche sandwich

  • For the toast, cut eight slices as thin as possible from the (stale) sourdough bread and place them on the baking tray.
  • Spread the ghee over all the slices and sprinkle them with salt. Place another sheet of baking paper on top and put the baking tray in an oven at 180 degrees for 13 minutes. Allow the bread to cool completely.
  • For the salsa, mix the shallot and the pickled cucumber with a pinch of salt and 2 tablespoons of sorrel oil.
  • For the ceviche, cut the herrings into thin diagonal pieces and divide them among the plates.
  • Drizzle a teaspoon of salsa over each piece of fish and crumble the toast over the plates.
  • Pour a tablespoon of sorrel oil onto each plate and grate the lemon zest over it.
  • Then cut the lemon in half and squeeze the fresh juice over the fish.
  • Garnish the dish with the clover sorrel leaves before serving.

How to make sorrel oil (for 4–6 servings)

Ingredients: 4 bunches of sorrel, 100 ml sunflower oil + blender and fine-mesh sieve.

  • Briefly blanch the sorrel in boiling water and cool it under cold running water.
  • Place it in a tea towel and squeeze out all the water.
  • Finely chop the sorrel and place it in a blender.
  • Heat the sunflower oil to 70 degrees and add it to the blender as well.
  • Blend until completely smooth and pour the oil through a fine-mesh sieve into a bottle.
