Recipe for Fiery Chicken with Cheese, Korean-Style

Billy: “It is said that many Koreans eat extremely spicy food to reduce stress. This dish will certainly numb the pain of a tormented soul. Buldak literally means ‘fire chicken’, and that is no exaggeration – the dish is very spicy! A few years ago, a smart person decided to temper the spiciness by covering the chicken with cheese. Since then, the popularity of this spicy chicken dish with cheese has risen rapidly worldwide. But be warned: this dish is definitely not for the faint-hearted.”
How to make fiery chicken with cheese
- Make the marinade by mixing all the ingredients thoroughly in a bowl. Add the chicken to the marinade and mix until the meat is completely coated. Cover the bowl, place it in the refrigerator and let the chicken marinate for at least 1 hour.
- Heat the oil in a large non-stick frying pan or wok with a lid over high heat. Add the chicken and stir-fry for 5 minutes. Pour 60 ml of water into the pan, reduce the heat to medium and let the chicken simmer gently with the lid on for
5 minutes. Remove the lid, increase the heat slightly and stir continuously until the sauce has reduced and thickened, after about 2 to 3 minutes. - Preheat the oven grill to its highest setting. Sprinkle half of the mozzarella over the bottom of a sturdy cast-iron pan, spread the chicken over it and sprinkle with the remaining cheese. Place the pan on the top rack in the oven and grill the chicken for 5 minutes, or until the top is golden brown.
- Remove the chicken from the oven and garnish with the spring onion. Pull the lettuce leaves from the head and use them to wrap the chicken, as with san choy bao, a Chinese lettuce wrap.
