Recipe: Fresh spicy toasted sandwiches

TikTokker Soraya Riem wrote the cookbook for every amateur chef who doesn’t want to cook anything too complicated, but does want to eat Seriously delicious! food. This book is packed with ultimate comfort food that is guaranteed to make your mouth water. From crispy Doritos chicken wraps to this fresh spicy toasted sandwich: did someone say food porn?

Soraya: “Spicy toasted sandwiches are obviously a brilliant invention. The only problem is that the supermarket across the street from me doesn’t sell them, so I decided to make them myself. Not difficult at all. This recipe makes about four toasted sandwiches. I personally triple the recipe so I can throw a whole batch of toasted sandwiches into the freezer. After all, they’re also just kept in the freezer at the supermarket. That way, you always have spicy toasted sandwiches within easy reach for next to nothing.”
How to make fresh spicy toasted sandwiches
- Finely chop the onion. Finely chop the pepper and garlic.
- Heat the oil in a frying pan and sauté the onion for 3 minutes. Add the pepper and garlic and stir-fry briefly. Add the minced meat to the pan and break it up.
- Once the minced meat is cooked, add the tomato purée, paprika, ground coriander, sambal, ketjap manis and a pinch of salt to the pan. Taste the minced meat (always keep tasting). Not spicy enough? Add as much sriracha as needed until you’re satisfied!
- Time to build: slice of bread, grated cheese, minced meat, grated cheese, slice of bread.
- Spread the outsides of the toasted sandwiches with a thin layer of butter and cook them in the sandwich maker or in the pan until beautifully golden brown on both sides.
- Serve with a sauce of your choice (I always serve them with a mix of mayo and chili sauce, nomnom).
