Recipe: Frico

The Italian oven dish frico is prepared with potatoes, onions and local Montasio cheese, also known as the Gouda cheese of Italy. This dish originally came about in the fifteenth century, like many dishes, as a way to use up leftovers—in this case, leftover cheese. Nowadays, it is mainly prepared with the typical Montasio cheese. Mangiamo!

How to make frico
- Peel and coarsely grate the potatoes through the largest holes of your grater. Remove the rind from the Montasio cheese and coarsely grate it as well. Peel and cut the onion into thin rings. Take a large non-stick pan and add a splash of olive oil. Sauté the onion over low heat until translucent.
- Then add the grated potatoes and a splash of water, and stir with a wooden spoon so they do not stick to the bottom. Cook for 15 minutes with the lid on the pan. Stir regularly.
- Then add the grated cheese and mix well. Season with a pinch of salt and black pepper. Put the lid back on the pan and cook gently for 20 minutes over low heat.
- When the cheese has melted and the potatoes are cooked, remove the excess fat from the pan. Turn up the heat slightly until a crust forms on the bottom. Turn the frico over and fry the other side briefly as well. Serve hot!
