Recipe: Fried dumplings filled with vegetables and tofu

For the vibrant follow-up to The Radiant Table, Morgane wrote her second vegan cookbook: Dinner Served. The book in the series contains more than 60 plant-based recipes that are nutritious, simple and incredibly delicious, such as these dumplings filled with vegetables and tofu. After all, according to Morgane, plant-based food should never be bland or boring.

Morgane: This dish is a simple and light version of dumplings. You make them with rice paper wrappers, which are available in most supermarkets, and fill them generously with vegetables and tofu.
How to make the fried dumplings filled with vegetables and tofu
- Heat the first tablespoon of oil in a pan over medium heat and sauté the garlic, carrot, onion, white cabbage and grated ginger until the vegetables are cooked.
- Add the tofu to the pan, along with the soy sauce and chilli paste, and sauté for another 2 minutes. Let the filling cool.
- Pour 3 l of lukewarm water into a large round dish and clean your work surface and make it slightly wet.
- Soak your first rice paper wrapper in the water for 5 seconds; it should be soft but still firm.
- Place the wet rice paper wrapper on the work surface and put 2 heaped tablespoons of the filling in the centre.
- Fold the left and right sides of the rice paper wrapper over the filling, then fold the bottom over the other two folded sides. Press everything firmly together. Roll the dumpling upwards until the roll is sealed. To make the dumplings extra firm, wrap the filled dumpling in a second rice paper wrapper in the same way.
- Set the finished rice rolls aside, optionally on a moistened piece of baking paper.
- Heat the second tablespoon of oil over medium heat in a non-stick pan and place a few rolls in it. Make sure they do not touch one another.
- Fry them for 2 minutes on each side (or until golden brown and crispy). Serve them with your favourite chilli sauce.
