Recipe from pasta diva Sophia Loren: fried pizza

Sophia Loren isn’t afraid to kick over a few sacred cows: ‘The famous Neapolitan pizza is not up for discussion, but I’ve also eaten delicious pizzas in New York, Nice and Paris, almost even better than those made nowadays around the Gulf of Naples.’ She’s entitled to say so: the 85-year-old actress is Italian through and through and crazy about cooking. In her cookbook Koken con amore, she recommends a seriously indulgent bite: fried pizza.

How to make fried Neapolitan pizza
- Make a supple bread dough from the flour, yeast and a little salt. Leave it to rise in a floured bowl and cover the bowl with a thin cloth or plastic wrap.
- Make the sauce while the dough is rising. Pour olive oil into a heavy frying pan and sauté the garlic in it.
- Add the tomatoes. Make sure not to get too much liquid from the tomatoes into the pan, otherwise the sauce will become too watery. Add a pinch of salt and let the sauce cook over high heat for fifteen minutes.
- Has the dough risen? Cut the mozzarella into small pieces, finely chop some more garlic and tear the basil into small pieces.
- Heat the frying oil.
- Pull a piece of dough from the dough ball (according to Sophia, you must absolutely not use a knife!) and shape it into a flat, round pizza. Fry it in the hot oil, turning it over quickly.
- Cover the pizza with a tablespoon of sauce, a little mozzarella, some Parmesan cheese, basil and garlic.
- How do you eat this pizza? Fold it in half so that the heat melts and blends everything together. No plate or cutlery—just eat it with your hands!
