Homemade hamburger

There’s nothing better than a good, homemade hamburger. It may take a little more time than a ready-made burger, but the reward is all the greater. This burger with lots of bacon is a real ‘guilty pleasure’: generously filled and packed with flavor. You’re allowed this kind of treat—and you can only eat it with your hands!

How to make the hamburger

  • Cut the bacon strips into small pieces and fry until crisp. Drain and leave to cool on paper towels. Mix the ground beef with the cooled bacon pieces, paprika and garlic. Season with pepper and salt. Shape the mixture into 2 hamburgers. Heat a little oil in a frying or grill pan and sear the hamburgers on both sides over high heat. Lower the heat and move the burgers to one half of the pan. Place the onion rings in the other half and fry along for a minute. Then stir the sugar and vinegar into the onion. Leave the meat and onions to cook over low heat for about 10 minutes. Meanwhile, mash the avocado flesh with a fork in a bowl.
  • Mix it with the red chili pepper and lime juice. Once the cooking time is up, remove the burgers and onion from the pan and set aside. Turn the heat under the pan to high and fry the bacon slices until crisp, 1–2 minutes.
  • Place the bottom halves of the buns on a plate. Spread each with ½ tablespoon of bacon mayonnaise. Place 2 lettuce leaves on top. Place the burgers on the lettuce. Add some of the avocado mixture to each burger. Place the fried bacon slice on top. Divide the caramelized onions over the bacon and place the pickle slices on top. Spread the top halves of the buns with ½ tablespoon of bacon mayonnaise and place them on the burgers. Insert a long satay skewer into the hamburger to hold everything in place.

How to make the bacon mayonnaise

  • Cut the bacon into small cubes. Fry the bacon until crisp. Drain and leave to cool on paper towels. Mix the cooled bacon with the mayonnaise.

Tip: make the bacon mayonnaise an hour before using it, so the bacon flavor has time to infuse.
