Recipe: how to make a bouquet garni

In Sausbijbel, Julius Jaspers uses more than 250 recipes and handy tips, clear instructions and step-by-step photography to show you how to make the best sauces and flavorings yourself. Such as a stock containing a bouquet garni.

A bouquet garni is a little bundle of herbs and/or spices that add flavor to your sauce or soup. Making a bouquet garni is a matter of common sense. You don’t make a kilo for a small sauce, and you don’t make a bundle the size of your thumb for a 5-liter pot of stock. There are no fixed rules; experiment with herbs and spices. Think in terms of flavor…
How to make a bouquet garni
- A bouquet garni should contain at least parsley, thyme and bay leaf.
- Tie everything together using butcher’s twine.
You can also buy handy linen bags, or small perforated metal balls into which you can put your chosen herbs and/or spices. This way, you can remove the bouquet garni from your dish in one go.
