Endless variety of flavours

There are endless varieties and flavours of Bubble Tea, with the chewy tapioca balls (or pearls) as the highlight. You can simply buy them at an Asian supermarket.

The basis for Brown Sugar Boba

You can make your Boba as elaborate as you like, but the basis of Brown Sugar Milk consists of:

– Tapioca pearls
– Chinese Rock Sugar (or brown cane sugar)
– Water
– Milk
– Ice cubes

How to make Brown Sugar Boba

Don’t be alarmed when you open the tapioca pearl package: the balls are still hard at this point. That changes as soon as you add boiling water and let them sit for fifteen minutes. If all goes well, they will float to the surface after those fifteen minutes.

The tapioca balls are flavourless on their own. To give them a sweet touch, make a simple sugar syrup. Boil the (brown) cane sugar and dissolve it in water until it has a syrup-like consistency. The amount of sugar is up to you, depending on how sweet you want it. Once the sugar has dissolved and the mixture has a syrup-like texture, you can add the cooked tapioca pearls. Mix the syrup with the pearls.

Note: there is also a shortcut if you don’t feel like making the tapioca pearls. The easiest and fastest way is to use tapioca pearls from the Wu Fu Yuan brand. These pearls are already infused with brown sugar. All you need to do is cook the pearls (instructions on the label).

Add the brown-sugar-infused tapioca pearls (the Boba) to a tall glass and, depending on how sweet you want the drink to be, add more syrup.

Add some ice cubes and pour in a generous splash of your favourite milk. The drink should have a beautiful creamy colour. Enjoy your Brown Sugar Boba!
