Recipe: how to make the most delicious quesadillas

“Anyone who knows me a little knows that I have a soft spot for quesadillas. They’re quick, easy and always delicious. You can fill them with American cheddar (my favorite) and add vegetables, fish, chicken or other meat as desired. However simple quesadillas may seem, things often go wrong. Don’t use a non-stick grill pan, never try to make a quesadilla in the oven and don’t use oil. Do the following: heat a grill pan or barbecue. Grilling adds an essential extra layer of flavor.”

How to make the quesadillas

  • Place the tortillas on the counter and cover the lower half of each tortilla with a generous amount of cheese. Fold the top half over it; each tortilla is now a semicircle.
  • Prepare the quesadillas on the grill plate or barbecue as described above.
  • Cut each quesadilla into 4 wedges and serve immediately with one or more of the recommended toppings above.
