Super snack to make at home right now: quesadogas

Stuck at home and craving a guilty pleasure snack? The kind that technically falls into the disgustingly delicious category, but because you actually have to spend a (very) short while in the kitchen making it, gets elevated to ‘ooh, insanely tasty, homemade?’ And one that’s fun to put together with the kids when you’re all at home anyway? Here you go:

A quesadoga is what you get when you cross a quesadilla (easy: two tortillas with cheese and whatever else you want to throw in between them in the pan) with a hotdog sausage (easy, full stop). To make it properly Tex-Mex-style, you’ll also need a jar of nacho cheese dip/sauce; you can find Santa Maria’s at the supermarket.

How to make quesadogas

  • Sprinkle a tortilla with some cheddar, young matured cheese, spring onion and chili powder.
  • Place another tortilla on top.
  • Repeat with the remaining ingredients, reserving a little spring onion.
  • Heat a frying pan with the sunflower oil over medium heat.
  • Briefly fry the quesadillas in the pan.
  • Set them aside on a plate or chopping board, spread with the nacho cheese dip/sauce and place one sausage on each quesadilla, slightly toward the edge.
  • Roll up the quesadilla, secure with a cocktail stick if necessary, and place it back in the frying pan.
  • Fry and turn them over, for about another 3 minutes, until golden brown.
  • Spread with some sour cream, sprinkle with the remaining spring onion, and serve immediately.
