Recipe: how to make the tastiest savory falafel waffles

Mounir Toub is one of the best-known chefs in our country. He regularly appears on TV shows, writes cookbooks and teaches hospitality. His latest book is called Fast Arabic. In it, Mounir shows you how to prepare the tastiest Arabic dishes within 30 minutes. Like these savory falafel waffles with beetroot salad; at least as delicious as a sweet waffle!

Mounir: “Be honest: they can wake you up in the middle of the night for a sweet waffle with a red-fruit and honey topping, right? Try something new too, because a savory waffle is every bit as delicious!”

How to make the savory falafel waffles

  • Weigh and measure everything carefully and lay it out neatly. Preheat a waffle iron (see tip below).
  • Put the chickpeas without their liquid (save the liquid, also known as aquafaba, possibly for another dish) in a food processor with all the other waffle ingredients and blend until completely smooth for 3 minutes.
  • Spoon some of the chickpea mixture into the waffle iron and bake all the falafel waffles this way. After baking, keep them in a clean, dry tea towel so they become slightly softer.
  • Mix the beetroot with the onion, parsley, vinegar and extra virgin olive oil and season with salt and pepper.
  • Place a falafel waffle on a plate and spoon some of the beetroot salad on top. Cover with another falafel waffle and enjoy!

Tip: Grease the waffle iron well with baking spray or a little oil; otherwise the waffles will stick.
