Recipe: Jambalaya with chicken, sausage and shrimp

Jambalaya

Jambalaya is one of New Orleans’ most iconic dishes. The dish dates back to the colonial era, when locally available ingredients were combined into a savory dish inspired by Creole and Cajun cuisine.

How to make jambalaya with chicken, sausage and shrimp

  • Preheat the oven to 180 °C.
  • Heat the olive oil in an ovenproof, heavy-based pan over medium-high heat. Add the chicken and sausage and fry, stirring, for 5 minutes until browned all over.
  • Add the onion, garlic, bell peppers and jalapeño peppers and fry for 2 minutes. Add the tomato pulp and shrimp and fry, stirring, for 3–4 minutes.
  • Add the rice, Cajun spice mix, thyme, cayenne pepper, bay leaf, salt and black pepper and mix well. Add the chicken stock and bring everything to a boil. Once boiling, place the pan with the lid on in the center of the oven for 30 minutes. Check whether the rice is cooked. If not, return the pan to the oven for another 5 minutes.
  • Once out of the oven, let the jambalaya rest for another 5 minutes. Then gently stir the rice with a fork to release the steam.
  • Garnish the jambalaya with the parsley and serve hot.
