Recipe: my butter chicken by Jamie Oliver

How to make the butter chicken

• Halve the chillies, remove the seeds, place them with the tomatoes in a large non-stick frying pan over a high heat and turn them a few times until lightly charred all over. Meanwhile, peel and finely grate the garlic and ginger into a large bowl. Add almost all the garam masala, a pinch of sea salt and black pepper, and 1 tablespoon of yoghurt. Score the chicken breasts deeply at 1 cm intervals and rub in the marinade.
• Transfer the charred tomatoes and chillies to a board and return the pan to a medium heat with ½ tablespoon of olive oil and the chicken breasts. Cook for 10 minutes in total, turning halfway. Meanwhile, remove the skins from the tomatoes and 1–2 chillies (to taste), and roughly chop them. Transfer the crispy chicken breasts to a board and add the tomatoes, chopped chillies and cashew butter to the pan. Pour in 250 ml of boiling water from the kettle and scrape up the browned bits from the bottom. Let the sauce bubble vigorously for 2 minutes; when it starts to thicken, return the chicken breasts to the pan for another 2 minutes, turning them a few times until cooked through, then transfer them to a board. Remove the pan from the heat, season the sauce and marble the yoghurt through it. Slice the chicken and serve with the sauce and the remaining chillies and garam masala.
