Recipe: Notorious P.I.G. feat. 2Paksoi

Tupac and Biggie are (probably) in separate rooms in hip hop heaven. But they do provide the inspiration for this easy recipe with pork tenderloin and coleslaw made with pak choi.

How to make the pork tenderloin with coleslaw and pak choi
- Peel the onion and cut into very thin rings.
- Cut off the bottom of the spring onion, (try putting it in a glass with a little water; it will simply grow back), and cut all the green part into thin rings.
- Remove the outer cabbage leaf and cut into very thin strips.
- Remove the leaves from the pak choi stalks, wash and dry them, and cut into thin strips.
- Chop or tear the mint and coriander leaves.
- Wash and grate the carrot.
- Put the red onion, spring onion, sliced cabbage, pak choi, mint, coriander and grated carrot in a mixing bowl.
- Add the mayonnaise and pickled ginger and mix well. Cover until ready to use; this is the coleslaw.
- Bring a pan of water to the boil, add the baby potatoes and cook for approx. 10 minutes until tender.
- While the baby potatoes are cooking, place a frying pan over medium-high heat. Add the olive oil and pork medallions and fry for approx. 8 minutes, turning regularly.
- Drain the cooked baby potatoes in a colander, keep the pan and add a tablespoon of butter. Lower the heat and return the baby potatoes to the pan once the butter has melted. Add a pinch of salt and pepper.
- Serve 3 medallions per plate, divide the potatoes between the plates, and add a generous portion of coleslaw.
