How to make the orange chicken

  • Preheat the oven to 180 °C.
  • Put the butter in a bowl. Squeeze the garlic cloves over it.
  • Grate the zest of the scrubbed orange over it.
  • Add the fennel seeds, ground chilli flakes, salt and ground pepper and, if you have some, finely chopped parsley.
  • Mash everything together with a fork until you have orange butter.
  • Remove the elastic band around the chicken and, if necessary, pat it dry with kitchen paper.
  • Spread the legs apart and season the cavity with salt and pepper.
  • If desired, make one incision in the top of each leg with a sharp knife.
  • Cut the peeled orange into quarters and put them inside the chicken.
  • Tie the legs back together with butcher’s twine.
  • Rub the orange butter all over the chicken.
  • Put the chicken in the roasting bag and seal it.
  • Place it on the baking sheet or in a roasting tin. Put it slightly below the centre of the oven and roast until done, about 1 hour.

Tips

  • A roasting bag looks like a plastic bag, but it can withstand the heat of the oven. The chicken roasts and steams at the same time, stays wonderfully tender and still turns beautifully brown. It also means less washing-up.
  • Roasting bags by the Toppits or Look brand are sold in packs of eight in supermarkets and household stores.
  • Why score the legs? This way they cook faster and are ready at the same time as the (drier) breast meat.
