Recipe: pear cupcakes with cream cheese frosting

We still have to wait a little while for the new season of Heel Holland Bakt with new clumsy home bakers. In the meantime, we’ll simply keep baking with the new Heel Holland Bakt Appeltaart baking book. The baking book is full of delicious recipes with apples (and pears!), such as these pear cupcakes with cream cheese frosting, to bake at home.

How to make the pear cupcakes

  • Preheat the oven to 190 °C. Divide the cupcake cases over the muffin tin.
  • Peel the pears and cut the flesh into small pieces.
  • In a large bowl, beat the butter and brown sugar with a hand mixer for 5 minutes until light brown and fluffy. Add the eggs one at a time. Only add the next egg once the previous one has been fully incorporated. Mix in the vanilla extract. Sift the baking flour over the batter and fold it in as lightly as possible. Finally, fold the pear into the batter.
  • Divide the batter evenly among the cases.
  • Bake the cakes in the centre of the oven for 15–20 minutes until golden brown and cooked through. Leave them to cool in the tin for 10 minutes, then remove them from the tin and allow them to cool completely.
  • Beat the cream cheese with the icing sugar and vanilla extract until smooth. Spoon the cream into the piping bag and pipe beautiful swirls onto the cupcakes.
  • Sprinkle with the pear sugar and decorate with a pear drop, if desired.
