We’re not asking much of you. You really don’t have to be a master baker capable of creating artistic macarons and sugar work. With these basics in your repertoire, everything will be fine.

For years, this was my go-to whenever I fancied a homemade bake but didn’t feel like going all out. Even a toddler with two left hands could make this cake, and the crunchy sugar topping is utterly irresistible.

Meringue

For an easy Eton mess dessert, or make a large pavlova. You need nothing more than egg whites and sugar, and you can do practically anything with them. And with all those leftover egg yolks, you can make crème brûlée or ice cream.

Not exactly a cake or pie, but you do bake them, so they belong on the list: fluffy American pancakes. Once you know how to make these, you’ll impress everyone who stays the night.
