Recipe: plantain guacamole

Guacamole is almost always made with avocados, but chef London Loy makes it his own way: with plantains. This recipe from his new cookbook My Recipes is super easy and definitely more than worth trying. And then dip delicious cassava chips into the green plantain guacamole. Or, also delicious: spread it on a freshly toasted bun.

How to make green plantain guacamole
- Mix the garlic with the parsley, cilantro, cane sugar, and the juice and zest of the lime.
- Peel the plantains and mash them finely in another bowl with a fork or potato masher. Add the herb mixture, yogurt, shallot, bird’s eye chili, and a splash of olive oil, and stir well. Season with salt and pepper. Serve with cassava chips or emping.
