Recipe: savory madeleines with Gruyère

Is everyone baking up a storm at home? Of course, be sure to support local businesses too if you can – but if you still have an hour to fill and you’ve got your daily exercise out of the way (so you don’t completely grow outwards these weeks), we’d say: fire up that oven for these insanely good cheese madeleines!

Our love for Gruyère can hardly be called subjective anymore. If you’re the world champion of cheese, you can expect us to look for all kinds of ways to incorporate you into our food, and madeleines are no exception…
How to make savory madeleines with Gruyère and lavender
- Preheat the oven (electric: 200°C / fan: 180°C) and set it to the setting that heats from above and below.
- Grease the madeleine mold with butter.
- Mix the flour, baking powder, egg, Greek yogurt and a little salt and pepper in a food processor or with a hand mixer until smooth.
- Fold in 45 g Gruyère and the lavender in batches.
- Spoon small mounds of batter into the mold and bake the madeleines in the oven for 10–15 minutes, until they feel firm and are golden brown.
- Let the madeleines cool slightly and sprinkle with some extra Gruyère before serving.
