Recipe: Spicy Cheese Balls

The Kookmutsjes are an outright hit on the internet. Following numerous requests from Nadia and Najat Yachou’s loyal readers, the sisters are now launching The Big Kookmutsjes Cookbook with more than 80 different sweet and savory recipes. “Cheesy, spicy and crunchy—that’s what we like at home! Apparently, our family isn’t the only one, because when we shared a recipe for a similar snack in the Kookmutsjes Facebook group, we had more than five hundred responses within 10 minutes. Not surprising, because our cheese balls are inspired by Burger King’s popular Chili Cheese Nuggets. The recipe makes a large quantity. Of course, you can freeze some of them or halve the ingredients, but then you do run the risk that there will soon be no cheese balls left!”
How to make the spicy cheese balls
- Melt the butter in a pan over medium-low heat and add the all-purpose flour. Whisk for 2 minutes. Add the water, black pepper, paprika, salt and garlic powder. Crumble the chicken stock cube over the pan. Mix well. Add the cheddar and grated cheese, mix everything and then add the finely chopped jalapeño. Stir everything together until smooth.
- Line the baking dish with parchment paper. Spread the cheese mixture over a baking dish and spread it evenly. Cover with plastic wrap. Place the cheese mixture in the refrigerator for 1 hour to set. Cut the cooled cheese mixture into pieces.
- Take approximately 13 grams of the cheese mixture and shape it into a ball, about the size of a golf ball. Put the all-purpose flour together with the black pepper and garlic powder in a deep bowl. Mix well. Beat the eggs in a bowl and put the panko breadcrumbs in a third bowl. Coat the ball successively in the flour mixture, the egg and the panko breadcrumbs. Repeat until you have approximately 50 cheese balls.
- Heat the sunflower oil in a frying pan or Dutch oven. Fry, when the oil is properly hot (180 °C), the cheese balls for 5 to 6 minutes until golden brown. Turn regularly. Remove the balls from the oil with a slotted spoon and let them drain on paper towels.
