The animal-friendly goose liver is from the brand Foie Royale. Meike: ‘Since I found goose liver from happy geese, we have eaten this dish as a starter on Christmas Eve. Delicious with an ice-cold glass of Sauternes, Tokaji or Gewürztraminer.’

Foie Royale is available from many online butchers and other online shops, such as Crisp.

  1. Heat a sandwich maker and grease the plates with butter.
  2. Top 4 slices of sugar bread with the Foie Royale and cover with the remaining slices of sugar bread.
  3. Cook in the sandwich maker until the bread is crisp and caramelized on the outside. Keep an eye on it, as sugar bread burns quickly.
