How to make taco scampi cocktail style

  • Preheat the oven to 180 degrees. Finely chop the avocado, iceberg lettuce, spring onion and cherry tomatoes and set them aside. Then make the mayonnaise.
  • Hang the wraps, folded in half, over the oven grill rack so they look like taco shells. Bake them for about 10 minutes or until crispy. Keep a close eye on them. Meanwhile, cook the scampi until done and season with the garlic powder, pepper and salt.
  • Next, make the cocktail sauce by mixing the Greek yoghurt, ketchup, apple cider vinegar, tomato purée, paprika, Tabasco and mayonnaise. Season with pepper and salt. Finally, remove the wraps from the oven and let them cool briefly. Fill them with all the ingredients listed above and finish with the sauce.
