Recipe: Turkish noodles with cheese and walnuts

Thanks to its unique location, Turkey is a treasure trove of culinary delights. Cookbook author Hale Amus grew up in Istanbul but moved to the Netherlands in 2016, where she opened her restaurant Turkish Tale. In The Bible of Turkish Cuisine, Hale shares recipes from the various regional Turkish cuisines, such as these noodles with cheese and walnuts.

Hale: “This dish comes from Bolu, the city where kashk, a type of Turkish cheese, originates. It is fairly simple and quick to prepare, yet delivers an unexpectedly rich flavor.”

How to make Turkish noodles with cheese and walnuts

  • Bring 2 liters of water with the salt to a boil in a large saucepan over medium-high heat. Add the noodles and cook until tender, 10 to 12 minutes. Drain and set aside.
  • Melt the butter in a frying pan over medium-high heat and fry the walnuts in it for 1 minute. Add the kashk and fry for another 2 minutes. Add the noodles and stir gently.
  • Divide the noodles among the bowls and garnish with the flat-leaf parsley.
