Recipe: Vegan apple pie

For all you vegans out there! This could well be the showstopper of your Christmas dinner: an original version of the traditional apple pie with crispy brisée pastry, without eggs, milk or butter.

How to make the vegan apple pie

  • Mix the flour, cane sugar, salt and lemon zest in a bowl. Add the oil and start kneading; when the oil has been absorbed, add the water and continue kneading until a lovely smooth dough forms. Then let the dough rest in the refrigerator for 30 minutes.
  • Meanwhile, prepare the filling: peel the apples, combine the thinly sliced apples with the sugar, cinnamon, cornstarch and lemon juice, mix well and set aside.
  • Take the dough and divide it into two parts. Roll it out with a rolling pin to a thickness of approximately 4 mm, line a round baking tin, prick holes with a fork and pour in the apple mixture. Make strips with the other half and cover the pie with them.
  • Brush the surface with the soy milk and sprinkle cane sugar crystals over the surface, which will give it a crispy bite. Bake for approximately 45-50 minutes at 180 ° (during the last 10 minutes, you can cover the pie with aluminum foil to prevent the top from burning too much).
