Recipe: Vegan chocolate mousse cake

It’s November, which means World Vegan Month. This delicious vegan chocolate mousse cake, with soft chocolate mousse and ganache in a crispy crust, is proof that plant-based eating can be truly fantastic!

The recipe comes from Willem-Pie Bakery. All the cakes made by Willem-Pie are vegan. And above all, very delicious.
What you need for the vegan chocolate mousse cake
Crust
75 grams coconut flour
75 grams nut or coconut flour
30 grams buckwheat flour
120 grams cold plant-based margarine
1/8 tsp salt
¼ tsp speculaas spices
50 grams coconut blossom sugar
½ tbsp ground flaxseed mixed with 2 tbsp water
1st filling layer
400 grams silken tofu
100 grams coconut milk
250 grams extra-dark chocolate
20 grams cocoa
100 grams pitted dates
1 tsp vanilla powder
pinch of salt
3 tbsp date syrup
Ganache
100 grams extra-dark chocolate
50 grams coconut milk
pinch of salt
Decoration
fruit of your choice
How to make the vegan chocolate mousse cake
1. Preheat the oven to 175 degrees.
2. Melt the plant-based margarine in a saucepan or microwave (or place it in the
oven while it is preheating).
3. Mix all the ingredients for the crust.
4. Line the base of an 18 cm springform pan with baking paper and grease the sides.
5. Spread the crust mixture over the pan and place it in the fridge briefly to firm up.
6. After 10 minutes, place a second sheet of baking paper over the crust and fill it with dried
beans or rice, which you can use to blind-bake the cake.
7. Blind-bake the cake for 18 minutes, remove the baking paper and beans, and bake for another 7 minutes until crisp.
8. Remove from the oven and place in the fridge to cool.
9. Melt the chocolate au bain-marie.
10. Blend the remaining mousse ingredients in a food processor. Finally, pour in the melted chocolate.
11. Pour the mousse onto the crust and place it back in the fridge.
12. For the ganache, chop the remaining chocolate into small pieces.
13. Heat the coconut milk in a saucepan and stir in the chocolate and salt
until you have a ganache.
14. Spread the ganache over the cake and decorate with fruit of your choice.
