Recipe: Wouter Bijdendijk’s birthday brownie

How to make Wouter’s birthday brownie

  • Melt the butter in a saucepan. Leave to cool.
  • Preheat the oven to 175 °C using bottom heat.
  • In a bowl, mix the melted butter, oerzoet and vanilla sugar, cocoa powder, lemon zest and eggs with a whisk or mixer. Add the spelt flour and chopped walnuts and mix well again. Line the baking tin with baking paper, grease with a little butter and pour in the batter. Bake for 40 minutes in the centre of the oven.
  • Insert a pin or the tip of a knife into the brownie to check whether it is done. If batter sticks to it, the brownie is not done enough yet. Return it to the oven for a few more minutes.
  • During the final minute, break the chocolate into pieces over the brownie and let it melt briefly in the oven. Remove the brownie from the oven and smooth the melted chocolate with a spoon or spatula. Let the brownie cool completely and cut into 20 pieces.
