Don Papa Baroko Orchard Old Fashioned

You may already know that we’re fans of Don Papa Rum, so the announcement of a new variant was greeted with cheers here. Don Papa Baroko is the name of this new addition, in a beautiful new bottle, and you can make fantastic cocktails with it.

As far as we’re concerned, every month of the year is a good time to make an Orchard Old Fashioned. You make it with Don Papa Baroko.

Incidentally, Don Papa is named after Papa Isio, the Filipino revolutionary under whose leadership, in the 1890s, the Spanish occupiers of the island of Negros (locally known as Sugarlandia) were expelled, thereby securing the island’s independence. The island is home to an active volcano, Mount Kanlaon, and its climate and volcanic soil make the area exceptionally suitable for growing sugar cane. This is used to make rum, and Don Papa’s single-island premium rum is a source of Filipino pride. So you can proudly serve a cocktail made with it too!

Deep flavour, tropical soft aroma

Don Papa Baroko is aged in old American oak barrels for greater depth of flavour. You can detect aromas of vanilla, fresh citrus and tropical fruit, with notes of cherries, tropical fruit, honey and vanilla, while the finish is robust and lingering. Delicious to sip neat, of course, but also a fantastic ‘base’ for a cocktail, such as an Orchard Old Fashioned.

How to make an Orchard Old Fashioned

You’ll need this for 1 cocktail:

  • 60 ml Don Papa Baroko
  • 10 ml peach schnapps
  • 3 to 5 drops Calamansi bitters
  • garnish: ice cubes and dried orange
  • tumbler glass

Here’s how to make it:

  • Pour the peach schnapps into the glass
  • Add the bitters and the Baroko rum
  • Add the ice and dried orange
  • Stir the cocktail
  • Cheers!
