Restaurant Flore reopens in Amsterdam: sustainable fine dining and impressive design

Restaurant Flore, awarded two MICHELIN stars and a Green Star, will reopen its doors on April 2 at the iconic De L’Europe Amsterdam hotel. Under the leadership of Executive Chef Bas van Kranen, this reopening marks a new chapter in the world of sustainable gastronomy and refined design.

Conscious fine dining in a new look
After an intensive transformation, Flore presents an interior that fully reflects its philosophy of conscious fine dining. The design exudes natural luxury, with hemp-lime walls, brass accents and handmade furniture creating a harmonious atmosphere.

A real eye-catcher is the undulating ceiling, inspired by the flow of the Amstel, on which Flore is located. This organic design not only improves the acoustics but also creates a sense of calm and movement.
The Kitchen Table: exclusive dining in an intimate setting
A special addition is the new Kitchen Table, offering an intimate glimpse into the kitchen. This former Private Dining Room can now also be reserved individually—perfect for anyone who wants to experience the magic of the kitchen team up close.

Seasonal dishes with a local heart
The renewed menu takes you on a culinary journey through the Dutch seasons. Each dish is built around local ingredients that have been sustainably produced, harvested or caught. Think wild herbs from the region, sustainably caught fish from the North Sea and Wadden Sea, and slow-growing vegetables for maximum flavor.

These ingredients are tested and developed in Flore’s own Research & Development kitchen, where the team continuously experiments with techniques such as fermentation and preservation.
Sustainability as a core value
Chef Bas van Kranen is known for his innovative approach to fine dining. Since Flore opened in 2021, he has positioned the restaurant as a pioneer in sustainable gastronomy, earning it a MICHELIN Green Star. “At Flore, everything revolves around conscious choices and honest flavors. We follow the rhythm of nature,” says the chef. He cooks the way he likes to eat himself: fresh, elegant and light. Instead of traditional luxury products such as foie gras or caviar, Van Kranen opts for hyperlocal ingredients with maximum impact on flavor and minimal impact on nature. This has earned him recognition not only from MICHELIN but also from leading restaurant guide Gault&Millau, which named Flore “Vegetable Restaurant of the Year 2024.”

Practical information & reservations
Flore is open for dinner from Wednesday through Saturday from 6:30 p.m., and for lunch on Friday and Saturday. Dinner costs €250; lunch is €200 (shorter menu) / €250 (extended menu). Reservations can be made via: www.restaurantflore.com
