Ron Blaauw and Brouwerij De Eeuwige Jeugd Organize Het Kaassouffleest
Chef Ron Blaauw had already figured out how to upgrade frikandellen; now he is going to fill our favorite cheese soufflé with amazing fillings. And you can taste them during Het Kaassouffleest at Brouwerij De Eeuwige Jeugd.
Frikandellen Festijn
September 23, 2020: we remember this day especially well—we paraded through the newsroom. Chef Ron Blaauw had come up with four exclusive, never-before-seen frikandellen, each inspired by one of his restaurants. And we were going to taste them during the Frikandellen Festijn. Then it was cancelled because of corona. But what is put in the barrel does not spoil. Following last year’s completely sold-out Frikandellen Festijn, Brouwerij de Eeuwige Jeugd presents this year: Het Kaassouffleest! With cheese soufflés from one of our favorite top chefs.
Cheese soufflés with beer
At Brouwerij De Eeuwige Jeugd, they brew beers with character, such as the Mokumse meid, Lellebel and the crafty young god Gladjanus. Naturally, you can drink those delicious beers with your cheese soufflés. Going Dutch during Het Kaassouffleest, because the cheese soufflé is also a Dutch product—more precisely: it is one of the oldest snacks we know. Snack bar owner Hans van Bemmel invented it in 1969 together with a local baker.
Normally, we have no idea what is in a cheese soufflé (unless we make cheese soufflés ourselves), but now we do. Five different cheese soufflés will be served, including a Burrata cheese soufflé and a Truffle cheese soufflé, so there will always be a perfectly matching beer to find.
Het Kaassouffleest
The five-course cheese soufflé dinner will be served on Tuesday, May 16 and Wednesday, May 17. Doors open between 18:30 and 19:00, and the dinner party ends at 22:00. Het Kaassouffleest takes place among the brewing kettles in the former boiler house of the Bijlmerbajes.
