Sergio Herman returns to Sluis

Sergio Herman is returning to his roots, back to Sluis. This is where it all began with his father, when he took over the Oud Sluis restaurant and earned three Michelin stars. Here, he is setting up a new restaurant, where he will once again be the chef himself.

Sergio had previously said that he was working on a new restaurant in Zeeland, where he would love to get back behind the stove himself. It now appears that this restaurant is taking shape: he is, as we speak, working on the design for a restaurant in Retranchement, in Zeeuws-Vlaanderen (a town in Sluis), according to his interview with de Volkskrant. It will be a private restaurant where he himself will be the chef around eight times a month. “Not every day anymore; I’ve had that.”

Passion

During the opening of his Frites Atelier in Brussels, he had already talked about the new restaurant and how much he misses cooking: “It will be for a very small group of people, highly selective. Ultimately, I am happiest when I cook. Yesterday I made a langoustine dish for Pure C and I cut my hand, and I liked that. That I finally cut my hand again. It felt good, because it gave me the feeling I used to have. You know, cooking is what I love doing most.”

Entrepreneur

Sergio makes sure he keeps moving. In Cadzand, he has three businesses: Pure C**, Air Republic* and Blueness. In addition, he has already opened seven locations of his Frites Atelier. He also still has the popular Antwerp restaurant The Jane.
