The combination of savory and sweet is hot. For example, Kaagman & Kortekaas serves a dessert of brûléed foie gras with sugar bread and saffron ice cream, while you can now simply buy peanut butter with sprinkles in a single jar. The buzzword we hear increasingly often in this context is swavory.

Definition: the combination of sweet and salty flavors. Of course, this combination in itself is nothing new. Just think of salted caramel, the old familiar pancake with bacon and syrup, and the peanut butter & jelly sandwich (tip: try this version from the book Extreem Beleggen). However, we are increasingly coming across surprising and unexpected swavory combinations. You definitely want to try these experiments at least once.

Everything donut

Following the cronut, it is now time for the everything donut. The dough is a combination of bagel and donut dough. Once fried, it is topped with a generous dollop of cream cheese frosting, followed by poppy seeds, sesame seeds, garlic, sea salt and pumpkin seeds. Chocolate bacon

Take slices of bacon, a bar of dark chocolate and coarse sea salt. Place the bacon on greaseproof paper and put it in the oven, melt the chocolate au bain-marie, and as soon as the bacon is crisp, dip it in the chocolate. Sprinkle sea salt over it—and, if available, some sprinkles too; why not?—and you are done. And happy, because this is seriously delicious.

White chocolate with caviar

Years ago, this dish by British chef Heston Blumenthal already caused quite a stir. The recipe came about when Blumenthal experimented with replacing salt with salty ingredients. Both caviar and white chocolate are high in amines: proteins that have a positive influence on flavors.
