You can take a croquette in all sorts of directions. We already had the Sinterklaas croquette letter and the chocolate croquette, but have you heard of the apple pie croquette? A brilliant idea, if you ask me.

At Bistro Croquant in Maastricht, owner and chef Roland Philipsen does the craziest things with the good old croquette. He has no fewer than fifteen different types of artisanal croquettes on the menu. How about a green curry croquette with lemon cream? Or a mushroom and truffle croquette with truffle cream, a confit chicken croquette with lovage cream, and a seafood croquette with saffron cream? Roland isn’t afraid of anything. But his apple pie croquette is at least as exciting.

Special filling and crust

The apple pie croquette has a soft, sweet apple filling and an extremely crispy crust made from chopped almonds. By the way, the croquette owes its crispy crust to the special way it is breaded. The croquette is first coated in fine breadcrumbs, then dipped in egg, and finally coated in panko, almond crumbs and white sesame seeds. The result is next level crunchy.

With Calvados

The apple pie croquette is served with liquorice ice cream and Calvados cream. If you love croquettes and apple pie, this is a combination you should definitely try at least once. Time to head to Maastricht!
