The Indian grilled cheese: dahi toast

They love it in India: dahi toast. This Indian equivalent of grilled cheese is filled with yogurt seasoned with chili peppers, onion and cilantro. A creamier and spicier version than your standard grilled cheese, and worth trying for that reason alone.
Filling
The most important part of a grilled cheese is, of course, the filling. For dahi toast, use a thicker yogurt, such as Greek yogurt. Mix the yogurt with a finely chopped onion, one finely chopped chili pepper and roughly a handful of cilantro. Spread this mixture between two slices of sourdough bread and toast the sandwich in a frying pan over medium heat until golden brown. Preferably use ghee (clarified butter)—your grilled cheese will be eternally grateful. The yogurt thickens from the heat and takes on the same texture as creamy ricotta.
Sauce
Before you sink your teeth into this creamy grilled cheese, let’s give some attention to an equally important element: the sauce. You can use regular ketchup or curry sauce, but this grilled cheese is begging for cilantro chutney. To make it, mix finely chopped cilantro, salt, sugar, lime juice and some finely chopped green chili to taste. Another option: garnish the grilled cheese with chhonk, a mixture of spices fried in oil, including mustard seeds and curry leaves. This creates a colossal explosion of flavor.
