The Netherlands’ Largest and Greenest Restaurant Opens in the Gashouder

Now that the star chefs of the largest one-and-a-half-metre restaurant in the Netherlands have packed away their knives again, the next exciting project is already emerging in Amsterdam’s Gashouder: green restaurant The Greanery.

Thursday, 24 September is the day: the doors will open to the pop-up restaurant, which will be open for the next four weeks.

Green, greener, greenest

The name gives it away a little: everything here revolves around greenery and food. All the food served is produced locally, energy emissions are offset and the restaurant is intended to operate without waste. In five years, Clayton Fredrik and Atakan Akardere, the creators of the new restaurant, want it to be energy-regenerating. Because that is the plan: five years, multiple editions, in multiple locations.

Deliciously local

What’s on the menu? Vegetarian dishes only, originating in and around Amsterdam. Think a Choux pastry with Kesbeke pickle. It will all be served in a ‘green paradise’, Frederik tells Het Parool. “The floor is covered in greenery, with tables in between. This also helps ensure distance between customers. At the same time, we’ll be video mapping: projecting videos onto the inside of the building. An extra futuristic theme.”

The restaurant is open from 24 September through 17 October; reservations can be made via the website.
