Janneke: “Salmon or tuna, that’s the question. I believe I like this tartare equally well with both. That’s why I’ll leave the choice entirely up to you, ha! The recipe is intended as a starter for 4 people, but I also sometimes serve this amount as a main course for 2. (So you’ll be eating a double portion.)”
How to make the salmon or tuna tartare
- Cut the salmon or tuna fillet into small cubes.
- Mix the onion, ginger, soy sauce, the juice of half a lime, sesame oil and wasabi into the fish. Taste and season the tartare further with pepper. You can also add a little extra lime juice or wasabi to taste.
- Halve the avocados and remove the pits. Scoop the flesh out of the skin with a spoon and mash it with a fork into a coarse purée. Season the avocado with lime juice and salt.
- Using a ring mold, make 4 beautiful tartares on 4 plates. First spoon a layer of mashed avocado into the ring, followed by a layer of salmon or tuna tartare.
- Garnish the tartare with sesame seeds and chives.
