These are all the Michelin restaurants in Amsterdam: new and established names

The Michelin stars for 2025 have been awarded and Amsterdam is pulling out all the stops! The capital remains a culinary heavyweight, with several restaurants awarded one or even two Michelin stars. From icons such as Ciel Bleu to bold newcomers like CUE and Choux: these are the restaurants in Amsterdam where you’ll want to make a reservation if you’re looking to dine at Michelin level.

What is a star based on?
Good to know: at a Michelin-starred restaurant, the service is top-notch and the tableware is beautiful. But contrary to popular belief, Michelin stars are awarded solely for the quality of the cuisine a restaurant offers at a given moment. The service, tableware and atmosphere of a restaurant are not taken into account.
Five global criteria
In detail, these are the criteria used (worldwide) to assess a restaurant: the quality of the products, mastery of cooking techniques, harmony of flavours, the personality of the cuisine as expressed on the plate, and consistency of the service throughout the entire menu and across different visits.
Two Michelin stars in Amsterdam: 5 top restaurants you shouldn’t miss
This year, Amsterdam has 5 (or actually: six) restaurants with two Michelin stars. All of them are places where you can eat fantastically! In alphabetical order, they are:
1. Ciel Bleu
Since 2008, Ciel Bleu has enchanted guests with a gastronomic experience of the highest level. Literally and figuratively; Executive Chef Arjan Speelman, Chef de Cuisine Mike Klaassen and Maître Francesco Simonelli do this on the 23rd floor of Hotel Okura Amsterdam. And the dishes? They’re truly Chef’s kiss.
2. Flore
Conscious fine dining in the capital: that’s Flore (in Hotel De LʼEurope) in a nutshell. Under the direction of Executive Chef Bas van Kranen (pictured below), Flore takes guests on a culinary journey through the seasons in a serene setting. The ingredients are selected from a network of farmers, foragers and artisanal producers. In its own Research & Development kitchen, these ingredients are tested for various taste sensations, resulting in new dishes for the menu — which make way for new seasonal dishes as soon as the season is over.

3. Restaurant 212
One of the fantastic restaurants by Richard van Oostenbrugge & Thomas Groot. The food is of unparalleled quality, but the atmosphere is relaxed. In other words: fine dining without endless waffle, according to Richard.
4. Spectrum
Restaurant Spectrum at the Waldorf Astoria in Amsterdam has been known as a culinary hotspot for years. Chef Sidney Schutte’s dishes are truly spectacular, featuring top-quality Dutch products and international influences. Good news for anyone who wants to enjoy top gastronomy without sitting at the table until deep into the night: Spectrum recently launched a shorter menu, so you can dine more quickly, without any loss of spectacle.
5. Vinkeles
At restaurant Vinkeles in Hotel The Dylan, Natasja Noorlander and her team combine traditional and modern French cuisine. Beautiful setting, wonderful restaurant.
Bonus: 6. Aan de Poel (Amstelveen)
And let’s also include the fantastic Aan de Poel in Amstelveen. Just a stone’s throw from Amsterdam, by the water with a lovely terrace.
One Michelin star in Amsterdam: new names, familiar favourites
Amsterdam can also count itself lucky with no fewer than 18 restaurants awarded one Michelin star. These include not only established names, but also promising newcomers that make an immediate impression.
18 restaurants with a Michelin star
Not only classic Michelin-starred restaurants such as Bougainville and RIJKS received renewed recognition, but bold newcomers such as CUE and Choux also received a star this year. The new location of restaurant Bolenius in Rembrandtpark also received the regular star, in addition to the green Michelin star (the culinary distinction for restaurants leading the way in sustainability).
“It’s fantastic that our new location has received recognition so quickly. We work hard for it: in the kitchen, in the restaurant and in our own vegetable gardens. We’re incredibly proud of our local products and of rediscovering our own Dutch cuisine. The way we cooked a hundred years ago may well be the solution for sustainable cooking today,” says chef Luc Kusters.
