The list of Michelin restaurants 2025 has just been released! From newcomers with 1 star to established star chefs reinventing themselves: the new edition of the Michelin Guide Netherlands tells you where to dine at star level.

Today (Monday, October 6), the Michelin stars for 2025 were awarded in Maastricht. Gwendal Poullennec, international director of the Michelin Guide, is highly impressed by Dutch gastronomy. “From iconic establishments to daring newcomers: Dutch chefs continue to impress with their creativity, technical mastery and personal culinary vision.”

From sky-high ambitions in Amsterdam to culinary masterpieces in the Achterhoek: these are the starred restaurants you’ll want to know about.

Three stars: De Librije remains at the top, even after the loss of Jonnie Boer

De Librije in Zwolle retains its three Michelin stars in 2025. An achievement of unprecedented magnitude, especially in a year in which star chef Jonnie Boer passed away. The fact that head chef Nelson Tanate is leading De Librije forward brilliantly is also evident from the prestigious distinction of three knives he recently received at the global Best Chefs Awards. This number of knives is awarded only to the most impressive chefs in the world.

Two Michelin stars: GEM and Create enchant the inspectors

Gwendal Poullennec: “Talents such as Soenil Bahadoer and Guido Braeken confirm the Netherlands’ position as one of Europe’s most exciting culinary destinations.” It was already predicted, and has now come true: both chefs were awarded two stars at once for their new establishments. GEM. by Soenil Bahadoer in Gemert and Create by Guido Braeken in Eijsden can place two stars above their doors.

New stars: these five restaurants received their very first Michelin star

For these five restaurants, October was circled in red on the calendar—and rightly so. They join the club of Michelin restaurants with one star.

  • CUE (Amsterdam): Chef George Kataras strikes again! He was previously awarded a star for restaurant Vanderveen in Amsterdam, which closed shortly after receiving it. His smoky, layered flavors are back—and now awarded.
  • Choux (Amsterdam): Vegetable power meets sour, fresh and funky. Merijn van Berlo cooks with guts—and balance.
  • Olde Marckt (Aalten): Young talent Bram Stoverink immediately received a star and the Young Chef Award.
  • Novaela (Delft): Subtle Peruvian flavor combinations that make you forget you’re in the Netherlands.
  • Restaurant Calva (Nootdorp): Classic with a playful twist.

Green stars: sustainable and delicious

A Green Michelin Star is awarded to restaurants that combine sustainability with top quality.

  • Konijnenvoer (Arnhem): Kudos for the name! It is, incidentally, 100% misleading, because the food is anything but meager.
  • Tres (Rotterdam): Culinary journalist Mara Grimm described Tres as the Dutch Noma. The restaurant seats 16 guests for 18 (!) courses each. This means that over the course of about four hours, you’ll be blown away by everything Dutch waters and land have to offer in season, such as asparagus with red wood ants—which the chef catches himself—and duck-wing kebab. Tres bizarre, but it works!

Special Awards: who else took home prizes?

  • Mentorship Award: posthumously awarded to Jonnie Boer. Tears and pride. “It’s bizarre to stand here, but we feel that he is with us,” said Thérèse Boer upon receiving the award.
  • Service Award: Sandra & Michelle van de Bunt (De Leuf). Hospitality as it should be.
  • Sommelier Award: Ylja Berends (WY. Maastricht). Wine knowledge with flair.
  • Young Chef Award: Bram Stoverink (Olde Marckt). With this distinction, Bram firmly puts the Achterhoek on the culinary map. His cuisine stands for craftsmanship, seasonal produce and pure flavors, with expertise and hospitality going hand in hand. “It is a reward for our entire team and for our guests. We want to show that top restaurants are not found only in the Randstad; in Aalten, too, we cook at the highest level,” says Bram. You’ll be hearing a lot more from the chef who also received his first star this year.
