These classic salads are easy to whip up

Yes, the sun has come out, which means I want salads. Actually, I also eat a salad for lunch (or with lunch) in the middle of winter, and as far as I’m concerned, there can only be more of them in a day once spring arrives. And with these easy classic salads, there’s plenty of choice!

Of course, you can make a salad as packed, simple, filling or light as you like. You can vary to your heart’s content, and as long as you don’t make it a boring salad, you’re already off to a good start. Otherwise, begin by mastering these classics, so you always have a solid basic repertoire:
Caesar’s Salad
When we talk about classic salads, this one obviously can’t be missing. There’s plenty of controversy about whether or not it should contain anchovies, but either way, it’s a winner. Read the story of its origins here, along with the recipe for the most delicious Caesar’s salad.
Panzanella

Greek salad
Once, on holiday in a little apartment in Kefalonia without a kitchen, we still managed to put together a Greek salad almost every day. It wasn’t difficult at all, because we had a knife and something that served as a salad bowl (okay, a wash basin), and the most delicious feta was available everywhere, along with olive oil, of course, beautiful tomatoes and juicy olives. Add red onion and cucumber, and even a child could do it. In the salad bowl.

Hussar salad
Do you remember it?! Or perhaps you still come across it these days. I actually never do anymore, but I have fond memories of my grandmother’s old school hussar salad. I suspect there wasn’t anything particularly refined about it, but I’m sure everyone will get nostalgic if you put this on the picnic blanket at your next picnic. Boiled potato, a thick mayonnaise dressing, boiled egg, diced pickles, pearl onions (!) and peas (I was less of a fan of those; I think they came from a jar with carrots, which were roughly chopped and added too—not my grandmother’s finest work). And of course, diced ham, because hardly anyone was vegan in the 1980s. And do you also remember the equally classic twist? Diced beetroot was added, and suddenly it was pink: what a party!
