This honey-sriracha popcorn snack is one you’ll want to make right now

Looking for the perfect weekend snack, ideal with a beer when you’re having drinks with friends, but also for when you’re stretching out on the sofa for endless films or series? Then you absolutely have to make this:

Because when we say honey-sriracha popcorn clusters, you say ‘OMG yes, I want this now!’ And then we say ‘okay, maybe not right-this-second, but in an hour, and you’ll be so incredibly happy that you were patient for a little while!’ This is an unbelievably delicious snack, and it does require a few very simple steps and some time in the oven—but goodness, will it be worth it. The recipe comes from The Kitchn, and here’s what we’re going to do.

How to make honey-sriracha popcorn clusters

  • Preheat the oven to 120° C.
  • Slide two racks in so the oven is divided into three equal sections.
  • Line two baking sheets with parchment paper or aluminum foil.
  • Now make popcorn in a large pot using the best way to pop popcorn, using 1/2 cup of kernels.
  • As soon as the popcorn is ready, put it in a heatproof (!) bowl.
  • Melt 170 grams of unsalted butter in a small saucepan over medium heat.
  • Add 180 ml of honey and turn the heat up slightly.
  • Bring to a boil and let it boil for 4 minutes, stirring continuously with a wooden spoon or spatula.
  • Remove the saucepan from the heat.
  • Add 3 tablespoons of sriracha (or 2 if you want it milder), 1 teaspoon of salt, 1 teaspoon of vanilla extract and 1/4 teaspoon of baking soda.
  • Mix well; the mixture will foam.
  • Pour it directly, but gently, over the popcorn in the heatproof bowl while tossing the popcorn.
  • Keep tossing until all the popcorn is coated.
  • Divide it between the two baking sheets.
  • Place in the preheated oven for one hour, gently stirring or shaking every fifteen minutes.
  • When the popcorn is ready, its color will be slightly darker, and it will only become dry and crunchy once it has cooled completely.
  • After taking the baking sheets out of the oven, wait a little while until the popcorn has cooled slightly and you can touch it without burning your fingers.
  • Then immediately press some of the popcorn together at a time to create ‘clusters’, and let them cool.
  • You can also skip this step and simply leave the popcorn ‘loose’.
  • Let it cool completely, and you’ll have the most delicious crunchy sweet-and-spicy popcorn of your life.
