This is the best coleslaw recipe with the most delicious dressing

We can now cautiously say that BBQ season has truly begun. We recently tipped you off about our favorite barbecue recipes, but actually, a showstopper of a dish is missing. Coleslaw! The perfect side dish for your barbecue. Especially if you make it with the right dressing. We’ll tell you how.

Coleslaw basically consists of—indeed—cabbage. It’s important to slice the cabbage as finely as possible. Good coleslaw doesn’t consist of large chunks of cabbage, but thinly sliced cabbage strips. You’ll get the best result with a mandoline or food processor. If you don’t have one, carefully slice the cabbage into thin, fine strips with a sharp knife.
Crunchy cabbage
Optionally, you can add thinly sliced strips of carrot and finely chopped spring onion to your coleslaw. Carrot really belongs in it anyway; spring onion is optional. It gives your coleslaw a sharper flavor.
Don’t want watery cabbage (of course not!)? The trick to getting the water out of your cabbage is to mix it with salt. Put your finely chopped cabbage in a colander, sprinkle salt over it and let it rest for a while. Then squeeze the excess water out of the cabbage. And there you have it: no soggy mess, but beautiful, dried, crunchy pieces of cabbage.
Insane dressing
Then there’s the star of the coleslaw: the dressing. It really turns your coleslaw into a salad you’ll want to keep eating. The dressing is light, creamy and has a lovely balance between sour and sweet. A mix of buttermilk, apple cider vinegar and honey takes care of that. Full of flavor! You simply make it by mixing all the dressing ingredients together. You can vary it by replacing the apple cider vinegar with lemon juice, or the honey with maple syrup. Add salt and pepper to taste at the end.
Want to add another touch of green to your coleslaw? Finish it with some freshly chopped herbs, such as dill, chives or parsley. Coleslaw is delicious with barbecue (tip: with a pulled pork burger), but honestly: I think you can also easily take this to work for lunch.
