A piece of homemade brownie makes everything in life better. When I’m feeling lazy, I’m occasionally tempted by brownies from a packet (you know, the kind where you only have to add water). But honestly, a warm, fresh brownie from scratch naturally beats everything. I found an ingredient that turns your homemade brownie into a veritable feast fit for the gods: malted milk powder.

In the Netherlands, malted milk powder isn’t very well known. Go to an American supermarket and you’ll find packets and bags of malted milk powder in abundance in the baking aisle. But don’t be mistaken. There’s a very good chance you’ve already had malted milk powder (or malted milk powder) at some point. Unless you’re the only person on earth who doesn’t have a Malteser addiction. Yep, those crunchy chocolate balls list both malt and milk powder among their ingredients.

From baby food…

A long, long time ago, in 1887, malted milk first came onto the American market. American William Horlick was responsible for it. At the time, it was primarily intended as baby food. But the stuff soon became popular among people who had long since outgrown diapers. Malted milk was incredibly nutritious, long-lasting, and simply delicious. In terms of flavor, think of the nutty taste of toasted bread, with a lovely smear of butter on top. *drool*

…to brownies

Because of its popularity, people soon began experimenting extensively with malted milk powder. And what did they discover? It’s a fantastically delicious addition to cakes, milkshakes, and coffee drinks. Malted milk powder is especially the secret ingredient in brownies. It adds a kind of umami note to your chocolate bake: caramel-like and toasty. The earthy flavor also makes your brownies a little less sweet. A very nice counterpoint.

How do you incorporate malted milk powder into your brownie? Simple: mix a tablespoon of the powder into the dry ingredients of your brownie mix. Even a child can bake these brownies.

Where can you get it?

Ready-made malted milk powder isn’t so easy to find in the Netherlands. But wait, before you book a ticket to America for a malted milk trip: there’s a solution! You can simply mix milk powder and malt powder together. And as it happens, both are readily available at Dutch bread and baking shops and supermarkets.
