This is the trick for always ordering the best pizza

I can’t say this with certainty, but I’m willing to take a wild guess and say that pizza is one of the most copied dishes in the world. A lovely compliment to the Italians, but things also go horribly wrong very often. And if you don’t have the city’s best pizzerias at your fingertips, ordering pizza at random through a bicycle delivery service is Russian roulette. Well, I’ve come up with a little trick for that.

Treasure hunting among pizza delivery services

In Florence, I was at my wit’s end when I was craving pizza intensely and really didn’t want to leave the house for it. As a temporary resident, I had already scoured the local delivery apps completely, with endless lists of results. But being the unpleasant food purist that I am, I also realized that I wasn’t on pizza’s literal native soil, but in a touristy city center some four hundred kilometers away. It really does make a difference.

Project: ordering from the best pizzeria

So I decided to conduct an investigation by ordering the same pizza from every pizzeria on my shortlist, based on thorough online research: the margherita. A choice that will make people who have unconsciously eaten too many bad margheritas in their lives scratch their heads, but that’s precisely the point. If you can make a margherita boring for the person eating it, you’re doing something seriously wrong.

As simple as it is, a good margherita is the perfect balance of flavors. That requires well-made tomato sauce, good mozzarella and just enough fresh basil to avoid overpowering the flavor of the equally well-made dough. A good margherita is more like a delicately topped sandwich than a greasy meal, and you can eat it without feeling guilty. The cheese is only slightly melted, because a good pizza only needs a very brief time in an extremely hot oven. If you can’t resist the bufala, you should expect the cheese to be almost raw.

So order the margherita, because you can immediately write off a pizzeria that can’t make a good one. And if you find that margherita (I’ll just keep at it) too unadventurous every week, you can then move on to the rest of the menu. After all, you know that you’re in good hands at that particular pizzeria.
