Tip: Mario’s Freaky Ice Bar

Head to De Pijp in Amsterdam on Friday, July 7, because a special soft-serve pop-up is opening at The Fat Dog restaurant.

You’ve probably heard of chef Ron Blaauw’s The Fat Dog (read our Q&A with the renowned chef here). This is where you go for hot dogs such as the Vive la France with foie gras and truffle mayo, and a Paramaribo with chicken sausage, Surinamese blood sausage and piccalilli. And now, homemade soft serve too.
Not just any ice cream
And don’t think it’s just a regular bowl of ice cream—the pop-up isn’t called Mario’s Freaky Ice Bar for nothing. Mario—who previously worked at Librije’s Zusje—has come up with flavors that I immediately go wild for. I’m most curious about the passion fruit and buttermilk-based soft serve with roasted corn, jalapeño and salty popcorn cream (I’m a sucker for sweet-and-salty combos) and the chocolate version with brownie, cocoa sauce, white chocolate marshmallow and fresh basil.

About every three weeks, Mario changes the two base flavors, using them to create different combinations. What else has he come up with? I’m not revealing that yet—you really have to go taste it for yourself. You can do so from July 7 at 5:00 p.m. For more information, check out the Facebook event.
