Lidl thinks we eat too few vegetables and fruit, which is why they created National Vegetable and Fruit Day. The supermarket challenges us to enjoy some healthy snacking on June 20.

Whether you’re on the train, in the car or on the bus, snacking on the go can create quite a mess of containers, stickiness, bruised fruit and other spills. Nobody wants that. These are recipes for snacks to go, without the risk of chaos.

Courgette or pumpkin muffins

Add vegetables to your muffins and suddenly you can call them healthy. Yes! Try these courgette muffins or these pumpkin muffins by Jamie Oliver.

Pancakes

You can also pack your pancakes full of vegetables. If you add beetroot, the pancakes will also get a beautiful colour. Or make these small pancakes with carrot and courgette.

Smoothies

A no-brainer: you can pack smoothies full of vegetables and fruit. In fact, by adding fruit, you can even secretly give the biggest vegetable hater a dose of vitamins. Use banana as a base and blend it with carrot, ginger and pineapple, or go for mango, cucumber and mint, or kale, berries and mango.

Packing

If you simply want to take a piece of vegetable or fruit with you (with dips, of course), you need a handy container. Go for this snack ‘n dip box à la cheesedippers or just put your apple in an apple. Just as easy as carrying it loose in your bag, but without the bruises.
