Vegetarian umami bomb at restaurant MOER

We have been enjoying the organic dishes at restaurant MOER on Amstelveenseweg in Amsterdam for almost a year now. From Tuesday through Sunday, you can have breakfast, lunch and dinner there. We went there and tried the chef’s lunch menu.

Actually, it’s rather strange that we Dutch people never take the time to have an extensive lunch. Restaurant MOER agrees. You can go there six days a week (they are closed on Mondays) for both lunch and dinner. During lunch, there are sandwiches on the menu, but also a full three-course menu with dishes you would normally expect in the evening.
Don’t worry that you won’t be able to get back to work after a business lunch. We mentioned that we still had to return to the editorial office, and within an hour and a half we had finished four courses.
Local organic produce
During dinner, the menu is even more extensive and you can build your meal up to as many as seven (!) courses. Vegetables are at the heart of almost every dish; fish and meat are a lovely addition. There is a separate vegan menu, so there is something for everyone. The chef carefully chooses which local farmers and suppliers to work with, and you can taste it.
Sweet & sour
Our extensive lunch menu consisted of four different dishes. We started with a refreshing dish: a deconstructed Waldorf salad. Celeriac, sour raisins, apple, ice plant, lemon mayonnaise and, of course, walnut. We drank a soft Grüner Veltliner with it, which paired well with the dish’s delicate sweet-and-sour balance.

Into the woods
After this refreshing dish, it was time for the highlight of the afternoon: mushrooms, potato foam, mushroom and leek broth. We were won over after the first bite. So flavorful—this is a true umami bomb. Completely vegetarian, yet even the biggest carnivore won’t miss meat once they take a bite of this.
Hare royale
The main course consisted of Brussels sprouts, red chicory, hare fillet, sauce royale and potato mousseline. Lately, you see hare royale with blood sauce appearing on menus more and more often. You love it or you hate it. We loved it. Alongside it, a full-bodied, spicy merlot made the feast complete.

Chestnut cheesecake
Last but not least: dessert. Chestnut cheesecake, tonka bean ice cream and meringue, and mulled-wine sauce. A delicious winter dish with a cocoa crunch, making it the perfect ending to the meal. Afterwards, a plate of petit fours was kindly placed beside the coffee. You really think you can’t eat another thing after all that deliciousness, yet we made an obvious exception for these sweet treats. You would too if you were served a Snickers macaron. Right?
