Want to learn how to make your own yoghurt, sourdough bread, kimchi or pickles? You can do so during the ROTZOOI fermentation festival on September 25 at Mediamatic in Amsterdam.

Maybe you didn’t know this yet, but much of what we eat and drink, such as sourdough bread, cider and yoghurt, is fermented. According to Meneer Wateetons (one of the festival’s two initiators), fermentation is a magical rotting process. With the help of microorganisms such as bacteria, fungi and yeasts, food or drink rots. So rot can be very tasty indeed.

ROTZOOI Festival

During ROTZOOI, you can learn everything about the rotting process, get hands-on and make your own yoghurt or kimchi, as well as taste plenty of fermented cheeses, hot dogs, beer, coffee and bread.  Check out the complete food line-up here).

So rot can be very tasty indeed.

So go, because fermentation is hot. During Chef’s Revolution, for example, Jonnie Boer presented a ‘magic box’ containing kombucha (fermented drink), pickled tulip and fermented bell pepper sauce. And don’t think this is only trendy at Michelin-star level. Struik is organizing a Kimchi Week in Amsterdam’s Jordaan district, serving, among other things, a Korean kapsalon and Gochujang (Korean chili paste) tempeh.
