Want to make: stroopwafel tacos with cheesecake

I don’t think it has ever happened that Miljuschka has conjured something sweet from her kitchen that I wasn’t enthusiastic about. I often trust her when it comes to savoury dishes too, but when it comes to sweet treats, she really does have the very best inventions. That has been proven once again, because she made stroopwafel tacos with cheesecake… And now it’s the only thing I can think about.

An extra big plus because it’s not difficult to make and it doesn’t take long either. A dangerous combination.
How to make the stroopwafel tacos
All you need is a mixer, a frying pan and a freezer. Should be doable, right? Then just follow these steps.
- Heat the stroopwafels briefly in a frying pan (about one and a half minutes). The stroopwafels are ‘ready’ when you can bend them. Then carefully bend them around a wooden spoon to create a taco shape, and once they have cooled, place them in the freezer for another five to ten minutes so they become really firm.
- Soak the gelatine leaves in cold water for five minutes.
- Whip 250ml of the double cream together with the icing sugar until stiff using a mixer, then beat in the cream cheese. Next, heat the remaining double cream together with the gelatine until the gelatine has dissolved into the cream. Add this mixture to the rest, then leave it to set in the fridge for an hour.
- Fill the tacos, then leave them to set in the fridge for another one to two hours.
- Melt the chocolate au bain-marie and dip the tacos in it.
- Optional: decorate them further with, for example, sprinkles or anything else of your choice.
