What do (star) chefs eat when they’re drunk?

As long as I can remember, I’ve been asking questions. Good questions, stupid questions (because yes, they definitely do exist), strange questions and useful questions. I do the same in this column. Ask questions. To (star) chefs. A different one every week. Not a different chef, but a different question. This week: what do you eat when you’re drunk?

Michiel van der Eerde (BAUT): “A toasted cheese sandwich”

Jacob Jan Boerma (De Leest ***): “Nothing! Because I’m never drunk.”

Pascal Jalhay: “That was a long time ago, but FEBO! The famous diagonal one; from the top left of the vending wall to the bottom right… and vice versa.”

Soenil Bahadoer (De Lindehof **): “Cheese. I always have that in the fridge. Preferably raw-milk Munster and aged cheese, the truly Dutch kind with salt crystals in it.”

Joris Bijdendijk (RIJKS *): “I’m not drunk that often anymore, but when it happens, it’s at home on Sunday evening when the kids are in bed. My wife and I might have one last drink then. Out of the fridge comes a goat sausage, Leidse cheese and butter, toasted bread and French cornichons. And everything gets eaten!”

Edwin Vinke (De Kromme Watergang **): “Not much, actually—some cashews and smoked almonds.”

Schilo van Coevorden (Conservatorium Hotel): “Shawarma with garlic sauce. There used to be a good one in an alley on the Spui in Amsterdam, but it’s gone now. It doesn’t happen that often anymore. But if I get it, somewhere around Leidseplein.”

Jonnie Boer (De Librije ***): “I don’t get drunk very quickly. But if it does happen, I don’t eat.”

Freek van Noortwijk (including Breda, Guts & Glory, Maris Piper): “Kebab!”

Sergio Herman (including The Jane**, Pure C, Frites Atelier): “Drunk? That was a very long time ago. I don’t like it—the feeling of losing control. Besides, it’s also an assault on my body; you have to pay for it the next day. But that doesn’t mean I don’t enjoy having another drink in good company now and then; that should be possible too. Preferably with beautiful wines, and what I really like to eat when I’m getting close to having had too much is cheese and bread. I could really go all in on that!
