What is the difference between Hüttenkäse and cottage cheese?

Hüttenkäse is just as sexless and hip as Birkenstocks. Rice cakes with cottage cheese and fruit spread, crackers with cottage cheese, chicken breast and cucumber… It probably has something to do with the low calorie count, but for fun we’d rather eat something else (hello cracker with butter and aged cheese, yum!) Nevertheless: the German-speaking cheese has been everywhere lately. But the observant shopper standing in front of the supermarket refrigerator also sees cottage cheese next to it. So what exactly is the difference between Hüttenkäse and cottage cheese?

Let’s get straight to the point: there is absolutely no difference. Nothing, nada, zilch. Hüttenkäse is a German brand name, a brand of cottage cheese, that is. Sometimes you also see huttenkaas on the shelf. That is exactly the same too. Cottage cheese and huttenkaas are names for products that are not associated with a brand. Because Hüttenkäse is a brand name, you also pay more for it. Do with that information what you will.

Versatile curd cheese

Honestly, not everyone is crazy about cottage cheese/Hüttenkäse/huttenkaas. The main reason is its grainy texture. You do indeed have to be into that. Still, there is plenty of evidence that cottage cheese really is a great product to have at home. Very versatile, too. For example, did you know that adding a spoonful of cottage cheese to your pancake batter gives you super fluffy pancakes? And that this cheese works perfectly well on pizzas too? Cottage cheese is also packed with protein; with 12 grams of protein per 100 grams of cheese, it fits seamlessly into the protein craze, and you therefore see the cheese making frequent appearances in athletes’ diets.

Ricotta

Cottage cheese is made from cow’s milk, specifically from the curds of cow’s milk. That grainy texture develops after the cheesemaker has gently stirred the curds. They do this to drain the excess whey from the curds. Did you know that ricotta is made from that excess whey? Pretty neat, right? Cottage cheese and ricotta are somewhat alike. At any rate, you can easily substitute one for the other in a recipe. These ricotta pancakes with honeycomb butter are my absolute favorite. You can make them with cottage cheese too, of course!
